The Wine and Food Philosophy tasting experience happens when
you taste several different wines with a food, dish or series of
dishes. In a Wine and Food Philosophy class we prepare 6 dishes
and each dish is tasted with 6 different wines. At home you just
need to prepare a meal with one or several courses and have 2 to 6
wines to taste with the meal. This works great as a dinner party
where everyone brings a different wine.
So what does it mean to taste "different" wines. This is ususally by
grape variety. So a diverse selection of 6 wines might include
Riesling, Sauvignon Blanc, Chardonnay, Pinot Noir, Cabernet
Sauvignon and a Shiraz. Whether or not you choose to mix and
match old world wines with new world wines is up to you. It is fun
and educational regardless of theme as long as you have a diversity
of wines and a curious palate.
This is a tactile and sensory experience that allows you to discover
for yourself which wines and which foods go together. An expert can
tell you that a certain wine goes with a certain food, however, you
learn very little as to why. That is, asuming that the pairing does
work for you. All of us have different palates and while there are
certain universalities when pairing wine and food, no "perfect
pairing" is perfect for everyone.
